While Tourmaline’s menu will offer many classics people know and love, it will continuously evolve with the seasons.
This Summer start the dining experience with a captivating selection of appetizers, such as the Eggs in a Nest, Celery Root Latkas with Smoked Salmon Mousse, and Cornbread with Butter Poached Lobster and Succotash and Duck Liver Parfait with White Peaches and Rose Essence, Crispy Pork Shoulder with Sour Orange and Tahini.
As the menu progresses, there will also be must-try dishes ranging from Duck a la Press-- Pressed Duck, the traditional French dish presented tableside that’s a specialty at Daniel Boulud’s flagship NYC Restaurant Daniel and La Tour d’Argent in Paris.
Teaming up with Murray’s Cheese, Chef Lemoine will offer Fromage rolled right up to your table, from which you select from an assortment of premium cheese to be cut right there in front of you and presented for your enjoyment paired with artisanal breads and seasonal jams.
Pastry Chef Jesse Domenech brings passion to the pastry experience from Manhattan’s three-starred Michelin Le Bernardin and one-starred Michelin Le Coucou restaurants. Guests will enjoy the captivating desserts like the dessert of Chocolate Moelleux, a Rhubarb Pavlova with Salted Pistachios, and a seasonal Tarte Tatin paired with Intelligentsia Coffee close out the experience.
The wine program, curated by Nicole Muscari (DipWSET, FWS), is both personal and purposeful. Anchored in France, with strong showings from Champagne, Burgundy, and the Loire, the list also highlights New York producers and small growers from Italy and Portugal. Each bottle is chosen not just for quality, but for its ability to tell a story — many from independent, organic, or biodynamic vineyards. Thoughtfully built to reflect Nicole’s journey in wine and to complement Chef Yvan’s classically inspired menu, this is a list that invites conversation and discovery.
